Chistorra is a special type of fast-cure sausage from the north of Spain. It is made of minced pork with salt, spicy Spanish paprika, and other spices. It's considered a special type of chorizo that has to be cooked to be consumed.
With a rich and complex flavour, it can simply be barbecued, cooked in wine, or grilled. You can also add it to your pasta/rice dishes to add a slightly hot and distinct flavour.
